Colourful Quinoa Salad
We have been obsessed Costco shopping ever since my mother in law introduced us to warehouse shopping. Since moving to the mountains, we get most of our meat from Costco, and many of our dry goods for value. One of the items I’ve discovered lately was their quinoa salad. There is bursting with flavour, including veggies and beans. It makes a terrific summer salad or side dish when you’re grilling meat on the BBQ. Since we don’t get to Costco as often as I would like, I decided to try and make my own copycat version. I think it’s pretty close! It’s a great side dish, and it also is easy to make ahead which makes it really versatile dish for camping that pairs well with my potato salad or super simple tomato salad and a bin of raw veggies for nibbling.


- 1 cup of dry quinoa
- 1/3 bunch of cilantro
- 1 red tomato
- 1 cucumber
- 1 small red onion
- 6 fresh chives
- 4 tbsp vinegar
- Salt & pepper
- Prepare quinoa according to package instructions, drain & let cool
- Dice all vegetables & mix into cool quinoa
- Cut up chives & cilantro with scissors and mix into ingredients
- Throw in vinegar & salt and pepper and mix with spoon
- Cool in fridge overnight for best results
- Add more vegetables or beans to your taste!
